Nanny's Zucchini Pie

Looking for a great light lunch or dinner? It will also use up one of those zucchini's you might have sitting on your kitchen counter. I have been seriously craving Tomato Pie, but have yet to get my hands on enough homegrown tomatoes to make one. Many thanks to Julie for giving me a few tomatoes over the weekend. Our Sunday night BLT's were yummy! This delicious savory pie is another one of those old fashioned recipes that just screams summer. 
Nanny's Zucchini Pie

3  eggs 
2  cups shredded zucchini
1  cup chopped onion
1/4  cup vegetable oil
3/4  cup shredded sharp cheddar cheese
3/4  cup flour
1  teaspoon baking powder
3/4  teaspoon kosher salt
1/2  teaspoon black pepper
1/2  teaspoon dried sage
1/4  teaspoon paprika

Preheat oven to 350 degrees. Lightly grease a deep dish 9" pie plate. Set aside.

In a medium bowl, lightly beat the eggs.  Add the rest of the ingredients and mix well with a spatula.

Pour into prepared pie plate. Bake for 45 minutes or until set. Cool for 5-10 minutes before slicing.
