Bacon, Mozzarella, Tomato and Basil Sandwich


It’s Summer Time...

I am sooooo excited!!!  I just picked a nice batch of tomatoes from the garden.  If you remember, last year I did not harvest one tomato.  I have been anticipating this day for a long time.



I was trying to think how to use them . . . besides just sitting down in the garden and having one!  I had purchased some bacon in anticipation of the big day.  So, of course, I thought a BLT was the logical choice.   Then I walked past my basil area and saw it needed to be picked too.  On my way to the kitchen I came up with this brilliant idea . . a little change to the ole BLT.

Maybe some of you might think one shouldn’t mess with the BLT, but I am an adventurous type (in the kitchen anyway).  Come dinner time, I constructed a brand new sandwich in our home . . . . .   the BMTB.  

  

The BMTB stands for bacon, mozzarella, tomato and basil sandwich!!  Maybe you have already thought of this, but I hadn’t.  I toasted some whole wheat bread, lathered on a little bit of mayo and then added some wonderful bacon, thick slices of fresh mozzarella, a juicy slice of tomato and topped it off with fresh basil leaves!!

Let me tell you – I may never go back again.  But, either way, BLT or BMTB, a fresh tomato is hard to beat!!
