Kim, this casserole looks yummy!!! I'm planning to give it a try this week, along with your potato soup! I have some ground venison I need to use up (time to make room for this year's venison in the freezer!) and I think this recipe will be perfect for that. Thanks for sharing!

It turned out great! Everyone loved the dish. Hubby wantedmore enchilada sauce to top his serving but that's certainly a personal preference!
